KITCHEN SINK COOKIES AKA COWBOY COOKIES

Ingredients

3 cups flour

1 tablespoon baking powder

1 tablespoon baking soda

1 teaspoon salt

1 tablespoon cinnamon

1 ½ cups white sugar

1 ½ cups packed Light Brown Sugar

1 ½ cups butter room temp (3 sticks)

3 eggs

1 tablespoon vanilla extract- Good vanilla extract, not the imitation stuff

3 cups semisweet chocolate chips

3 cups old fashioned oats

2 cups flaked sweetened coconut

2 cups pecans

Directions

Step 1

Preheat oven to 350 * degrees If using dark nonstick baking sheets set to 325

Step 2

Mix flour, baking soda, baking powder, salt and cinnamon in a bowl and set aside





Step 3


In an 8-quart bowl, beat the butter until its creamy and smooth, takes about 1 minute on medium speed. Gradually beat in both the brow and white sugar until its combined , takes about two minutes , add one egg at a time- I suggest cracking each egg individual in to another small bowl to make sure there are no eggshells in the batter, nothing worse than biting in to an eggshell in a cookie

Beat in the Vanilla extract




Step 4

mix in the flour mixture until its combined, add the chocolate chips, oats, coconut, pecans until it’s just combined




Step 5

Foe each cookie drops ¼ cup dough on to ungreased baking sheets, spacing no more than 3 inches apart and no more than six ¼ cups on a baking sheet. As you can see the cookie dough is HUGE !! and they do expand slightly so this is why i recomand only six to a sheet



Step 6

Bake at 350 _ 325* for dark nonstick pans for 17-20mintues until the edges are lightly brown, rotating sheets hallway through- remove cookies to a baking rake not more than two minutes after removing from the oven- otherwise they will stick to the baking sheets!


Quicks notes

I ended up using quick cooking oats in place of the old-fashioned oats as that is what I had in my cabinet

On the chocolate chips you can sub 1 ½ cups of semisweet for dark chocolate, or butterscotch chips for a slightly different combo

For those who don’t like pecans you can substitute the pecans or walnuts

if you are allergic to nuts you can substitute dried fruit in its place
